Full of flavour and packed with goodness.
Here is a healthy bran muffin which tastes like no other.
Enjoy these muffins for breakfast or as a snack any time of the day.
1 ¼ cups oat bran*
1 cup Omega Grains
½ cup flax seeds
2 teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon baking soda
½ teaspoon salt
1 cup dried cranberries or raisins
1 cup fresh or frozen cranberries (or berries of your choice)
1 cup walnuts, toasted and coarsely chopped (or nuts of your choice)
1 cup buttermilk*
1/3 cup canola oil
1/3 cup maple syrup
1 tablespoon vanilla extract
2 large eggs
(makes 12 large or 24 small)
Preheat oven to 375 degrees F (180 C).
Line muffin tin with paper liners, set aside.
Combine oat bran, Omega Grains, flax seeds, baking powder, cinnamon, baking soda, salt, dried cranberries, frozen cranberries and walnuts in large bowl; make a well in centre.
Whisk buttermilk, oil, maple syrup, vanilla and eggs together in medium bowl.
Add to dry mixture.
Stir until mixture just comes together.
Let stand for 10-15 minutes. (can be prepared the night before, covered and refrigerated)
Spoon mixture into prepared pan.
Muffins will not rise so cups can be filled full.
Bake in preheated oven for about 18-20 minutes or until a toothpick inserted into centre of a muffin comes out clean.
Let stand in pan for 10 minutes before removing.
*oat bran can be found in bulk or flour section of most grocery stores.
*orange juice can be substituted for buttermilk. If so, do not add baking soda.
