3/4 cup butter
1 cup firmly packed brown sugar
½ cup maple syrup
3 large eggs
1 teaspoon vanilla extract
4 cups Omega Grains
1 cup whole-wheat flour
1 teaspoon baking powder
¼ teaspoon salt
2 cups chocolate chunks
(makes about 3 dozen)
Preheat oven to 350 degrees F. (180 C).
Line 2 baking sheets with parchment paper.
Process butter, sugar, maple syrup, eggs and vanilla in food processor for about 3 minutes or until well combined.
Combine remaining ingredients in large bowl.
Add butter mixture and stir until well combined.
Drop a teaspoon of mixture about 1 inch apart onto prepared baking sheets.
Gently spread each cookie using side of spoon.
Bake in preheated oven for about 12-14 minutes or until golden.
Cool completely before storing.
This cookie freezes very well.
