hearty bannock bread

Closely resembles Soda Bread

Easy, Easy, Easy

Serve warm with butter, or Hummus

Black Bean Soup with a slice on the side makes a satisfying meal

¼ cup vinegar

1½ cup milk

1 egg, beaten

1 cup Omega Grains

1 cup unbleached white flour

2 cups whole wheat flour

1 tablespoon flax seeds

3 teaspoons baking powder

1 teaspoon baking soda

1 tablespoon brown sugar

1 teaspoon salt

¼ cup butter

*olive oil, coarse salt

Preheat oven to 375 degrees

Use parchment lined cookie sheet

In a small bowl, combine vinegar and milk. Add egg, mix and set aside.

In a large bowl, mix dry ingredients together.

Cut in butter until mixture is crumbly.

Make a well in the center and add the wet ingredients to dry mixture. Stir with a fork until a soft dough is formed.

Knead the dough lightly on a floured surface about 10 times. Form into a slightly flattened circle.

Place on parchment lined cookie sheet.

*Brush olive oil on top, using a sharp knife mark with an ‘X'. Sprinkle with salt and/or herbs.

Bake for 30-35 minutes. Bread is ready when it is golden and when tapped sounds hollow.


This recipe freezes well.
