Oatmeal with apple, maple syrup and toasted chopped pecans…

Perfect energy food before or after a day of winter sports

3 ½ cups apple juice or apple cider

1 favorite red apple (cored and cut in medium chunks)

2 cups Omega Grains

¼ cup maple syrup

½ cup chopped and toasted pecans

*Makes 6 half cup servings

In a medium saucepan bring apple juice and apple chunks to a boil. Add Omega Grains and cook 3 minutes or until thick.

Divide 1/3 cup mixture among oven proof bowls.

Top each bowl with pecans and drizzle on maple syrup.

Place bowls on a baking tray and place under broiler; broil until hotties begin to bubble and topping turns golden brown about 1-3 minutes.

Hint:

Add favorite flavorings, ie. cinnamon, cloves, nutmeg, etc... to hottie when cooking and sprinkle some on top before broiling.

You can also add extra pecans with maple syrup mixed together to the mixture before pouring in bowls.

You can add a dollop of whipped cream, vanilla yogurt or even ice cream…….totally decadent and healthy.

Leftovers can be stored in the fridge with plastic wrap on top and reheated the next day adding extra apple juice, milk or soy milk.
